Traditional dutch split pea soup
Time: 30 min, 90 minutes of cooking time
Winter in the Netherlands cannot exist without this dish: 'erwtensoep'. It's delicious after a cold day or just for lunch when you just finished a skating trip. This soup is traditionally made with so called 'rookworst', which is a smoked sausage. When you prefer it without meat, you can just leave it out. Enjoy!

Ingredients
Servings: 1
- 500 grams of green split peas
- 1 celeriac
- 1 cube for vegetable bouillon
- 2 gloves of garlic
- 2 onions
- 1 leek
- 2 liters of water
- 2 carrots
- 1 parsnip
- 5 grams of fresh thyme
- 1 bay leave
- 1 smoked sausage
Step 1. Bring the split peas and water to boil. Add the bouillon cube and some pepper. Let it cook for 30 minutes
Step 2. Chop all the vegetables and add them to the pan together with the thyme and bay leave
Step 3. Let it cook for another 40 minutes
Step 4. Cut the smoked sausage into slices and add to the soup. Let it simmer for 20-30 more minutes
Step 5. Season with salt and pepper and enjoy!
