Carrot cake
Time: 20 minutes, 30 minutes oven time
I'll always make this carrot cake when I have some leftover carrots in my fridge. If you don't wanna waste any food, that's where you become creative. This is how it came out!

Ingredients
Servings: 1
- 100 grams of whole wheat flour
- 150 grams of grated carrots
- 1 banana
- 2 eggs
- 5 dates
- 50 ml of milk
- 20 walnuts
- 1 tsp of cinnamon
- 1 tbs of gingerbread spices
- 1 tsp of vanilla aroma
- 1 tbs of baking powder
- 1 pinch of salt
- 150 grams of dairy spread
- 1 squeeze of lemon juice
- 0,5 scoop vanilla protein powder
Step 1. Preheat the oven at 180 degrees celsius
Step 2. Mix the flour, cinnamon, gingerbread spices, baking powder and salt in a bowl.
Step 3. Blend the banana, eggs, dates, milk and vanilla aroma together.
Step 4. Add the dry ingredients to the wet ingredients and stir until combined
Step 5. Grate the carrots with a grater or with a kitchen machine (you need a special blade for this). Add the grated carrots to the batter
Step 6. Cut the walnuts and add to the batter
Step 7. Put the batter into a form and bake for 30 minutes
Step 7. Make the frosting by adding the lemon juice and protein powder to the dairy spread. Mix until they are really well combined.
Step 7. When the cake is cooled down completely, spread the frosting on top of the cake. Enjoy!
