Lemon coconut cake
Time: 20 min, 25-30 minutes oven time
If you want something more fresh after all the sweetness, then this cake is probably what you wanna make. The lemon combined with the dairy spread topping makes it really refreshing and of course delicious!

Ingredients
Servings: 1
- 60 ml of melted coconut oil
- 100 grams of coconut flour
- 1 tsp of baking powder
- 0.5 tsp salt
- 6 egg whites
- 4 egg yolkes
- 75 ml of honey
- 1 tbs of vanilla aroma
- 1 lemon (we only use the lemon zest)
- 200 ml of coconut milk
- 200 grams of dairy spread
- 1 scoop of vanilla protein powder
Step 1. Preheat the oven at 180 degrees celsius
Step 2. Melt coconut oil, set aside
Step 3. Beat the eggs stiff in a fatt-free bowl
Step 4. In another bowl, mix the coconut oil,egg yolks, honey, vanilla aroma and coconut milk. Sieve in the coconut flour.
Step 5. Spatula the egg whites trough the mixture
Step 6. Put the mixture into the baking mold and place in the oven. Bake for 25-30 minutes.
Step 7. In the meantime, mix the dairy spread with the vanilla protein powder. This will be the topping of the cake
Step 8. When the cake has cooled down, add the topping and enjoy!
